Travellers who went in rain or snow write about the waterfalls, not the weather. The complaints are about the cold on deck, so pack warm layers and a waterproof whatever the forecast.
The long days are long
From Queenstown, a Milford Sound coach day runs 11 to 13 hours and a Doubtful Sound day about 13. Reviewers mostly call it worth it, and a Te Anau base cuts the same day to 7 or 8 hours.
Doubtful Sound wins the quiet
Reviewers who did both fiords often prefer Doubtful Sound for its silence and space, and Milford Sound for the peak and the waterfalls close up. A small boat on Milford is the most praised choice there.

A tour with three thousand reviews and one with a few dozen are not a verdict on each other. The gap is mostly how long each has been on sale and how many seats it carries. A small boat or a yacht rated 5.0 by a few hundred travellers is worth reading closely rather than skipping. On a coach day, the road is part of what you are rating: the Milford Sound days stop at viewpoints such as Mirror Lakes and pass through the Homer Tunnel, and every Doubtful Sound day crosses Wilmot Pass there and back.
